HCMC hotel rolls out Peking Duck Promotion
New World Saigon’s Dynasty restaurant has launched a promotion of Hong Kong-style Peking duck through most of July.
Ho Wing Sang, executive sous chef at the Dynasty’s Chinese kitchen, told Vietweek that the promotion actually combines Peking duck with other cuisines.
Thus there are fusion dishes from duck meat and skin and foie gras sauce, com chay or clay pot crispy rice, and seaweed (Japanese style).
“As the Peking duck is a bit fatty, I like to add vegetables like cucumber, lettuce, green mustard leaves, and bean curd,” Ho said.
“I also add crunchy textures and fragrances to the dishes by using clay pot crispy rice, peanuts, and pine nuts.”
The promotion offers a “Peking Duck Delights” package (VND780,000 per duck) and a set menu (VND735,000 per person).
The first dish in the package includes rolls created with Chinese pancakes (black and white sesame, spinach, or seaweed) using duck skin, foie gras sauce, cucumber, spring onion, and red chili.
It then offers duck meat cooked in the diner’s choice of style: soup with green mustard leaves, bean curd; wok-fried Sichuan style; deep-fried with five spices, crispy garlic; wok-fried with pine nuts and lettuce; fried rice/fried egg noodles; clay pot crispy rice; or congee.
For the set menu, besides the duck-skin rolls and Chinese pancakes, guests can choose from a variety of dishes - duck meat with fried egg noodles, bean sprouts, and XO chili sauce or with green mustard leaves; duck bone soup; bean curd, wok-fried duck and pine nuts, lettuce; or glutinous dumplings, chocolate, and peanuts.
He has been working in Vietnam for 17 years, and prefers to use local ingredients, Ho said in fluent Vietnamese. He speaks Vietnamese at home with his children, he explained.
For the promotion, the hotel orders ducks from the Mekong Delta region.
“We noticed that guests at Dynasty have been ordering Peking duck more and more. Therefore, this month, we decided to offer them this promotion with Peking duck made in more styles.”
He explained that the best Peking duck uses birds that are between nine months and one year of age and weigh 2.2 to 2.6 kg. Traditional Peking Duck tends to utilize smaller birds, however, from 1,8 kg to 2 kg.
“Ducks in the Mekong Delta are of good quality throughout the year and are perfect for this dish.”

Luxury Resort to be built at Ban Gioc Falls
A luxury resort will be built at Ban Gioc Falls in Dam Thuy Commune of Trung Khanh District in the northern province of Cao Bang, according to Saigon Tourist Company, the main investor of the project.
Cao Bang Province is home to eight minority groups such as Dao, Thai and has much tourism potential.
The Pac Bo historical sites, and the beautiful landscapes of Thang Hen Lake, Pha Den Biodiversity site and Nguom Ngao cave already attract many visitors.
Among them, the grandiose and beautiful Ban Gioc Falls is one of the many tourist destinations. From the top of the limestone mountain range, Ban Gioc Falls drop deep into the blue river.
So far there is no tourist accommodation at this wonderful natural landscape site and much needs to be developed here, including proper traffic, as the area offers great natural produce, fresh air and wonderful weather.

Vietnam’s leading tourism company gets new leader
Authorities in Ho Chi Minh City have appointed Tran Hung Viet as the new director general of the state-owned Saigontourist Holding Company, one of the leading tourism corporations in Vietnam.
Viet, 53, has acted as the deputy general director of the company before getting the promotion to replace his predecessor, Nguyen Huu Tho, who has reached retirement age.
Established in 1975, Saigontourist currently manages over 100 hotels, resorts, restaurants, travel agents and entertainment areas. It is well-known for organizing annual events during Tet (Vietnam’s Lunar New Year) like the flower festival on Nguyen Hue Boulevard.

Three New Luxury Hotels For HCM City
On November 29, 2010, Saigontourist will hold a groundbreaking ceremony for its five-star Pullman Saigon Center Hotel, complete the foundation for its four-star Novotel Saigon Center Hotel and inaugurate its four-star Liberty Central Hotel.
The total investment capital for the three hotels is about US$113 million. These three hotels belong to Que Huong Liberty Joint Stock Co., under the umbrella of Saigontourist Holding Company.
Nguyen Huu Tho, general director of Saigontourist, said: “Regarding the development strategy for the period 2010-2015 and the vision for 2010, Saigontourist aims to become the biggest tourism corporation in Vietnam and the region in the fields of accommodation, tourism, gastronomy and other services. The company strives for a total turnover of over US$1 billion in 2015, making tourism a key industry of HCM City and Vietnam. The three hotels, Pullman Saigon Center, Novotel Saigon Center and Liberty Central of Que Huong Liberty Joint Stock Co., are among the tens of key investment projects of Saigontourist in HCM City.”
Pullman Saigon Center Hotel
The five-star Pullman Saigon Center Hotel, on the site of the former three-star Metropole (at 148 Tran Hung Dao St., Dist. 1), will be built with a three-level underground car park, 24 floors, with 300 bedrooms, restaurants, meeting rooms and fitness clubs. It has an investment capital of US$60 million and is due to be completed in 2013.
Pullman — a prestigious upscale five-star hotel brand of Accor group — will manage the Pullman Saigon Center Hotel. Currently, the Pullman network has 46 hotels around the world, and in the future Accor plans to develop 150 hotels under this brand.
Novotel Saigon Center Hotel
Work on Novotel Saigon Center Hotel, on the site of the former QueHuong 1 Hotel (at 165-167 Hai Ba Trung St., Dist. 1), started in April, and to date the foundation has been completed. The four-star hotel is due to commence operation in 2012, with three-level underground parking, 18 floors of hotel space, 250 bedrooms, restaurants, meeting rooms, leisure and entertainment rooms. The project’s investment capital is about US$38 million.
Que Huong Liberty Co. started building Liberty Central Hotel (formerly Que Huong Liberty 6 at 177-179 Le Thanh Ton St., Dist. 1), with the design by Ong & Ong Company (Singapore) and construction by CotecCons.
In February 2010, the company put part of Liberty Central Hotel into operation, consisting of one-level underground parking, 12 floors of hotel space, 139 bedrooms and other international four-star standard services, capitalized at US$15 million.
Central Restaurant can host up to 150 guests, serving breakfast and Vietnamese specialties in a Fusion style. LIO Coffee Lounge on the ground floor is a relaxing area for welcoming guests.
To meet the demand for meetings and parties, there are the luxurious Apollo conference room hosting up to 150 people, with modern equipment and two small meeting rooms, holding from 20-40 guests.
There are two private dining rooms on the second floor and the Executive Lounge on the 11th floor serving business guests.
In addition, staff at the Business Center and Concierge are ready to answer any questions. Guests can relax with services such as spa, massage, an outdoor swimming pool on the 12th floor and a gym on the top floor.
Liberty Central Hotel is managed by Saigontourist. Pullman Saigon Center and Novotel Saigon Center hotels will be under Accor’s management.

Forum To Call For Japanese Investment In Vietnam Tourism
A forum appealing for investment into the Vietnamese tourism market took place in Tokyo on November 25
Among those participants were Nguyen Phu Binh, Vietnamese ambassador to Japan, Nguyen Thi Hong, deputy chairwoman of HCM City People’s Committee, representatives of the Vietnam National Administration of Tourism and businesses from HCM City. Saigontourist was the main organizer of the forum. On the Japanese side, there were a representatives from the Japanese Ministry of Foreign Affairs and around 70 businesses concerned with the Vietnamese market.
“HCM City has been and will always be the choice for investors with a strategic vision. The cooperation for investment in Vietnam’s tourism market between Vietnamese and Japanese enterprises will bring about new and successful outcomes,” Nguyen Huu Tho, general director of Saigontourist, vice chairman of the Vietnam Tourism Association and chairman of the HCM City Tourism Association, addressed the Japanese investors in his opening speech at the forum.
At the forum, Saigontourist introduced to investors 12 projects of hotels, resorts and luxury complexes. Tho said he hoped Saigontourist would become a long-term trusted partner of Japanese businesses with strong capital and management, helping to boost the number of Japanese tourists visiting Vietnam and HCM City.
In the development strategy for 2010-2015, Saigontourist will focus on investing in 4,000 additional hotel rooms, resorts, leisure and entertainment complexes, conference centers and marinas of international five-star standard. These are concentrated in HCM City and other main tourist provinces and cities with strength in sea tourism, beautiful sceneries and unique local cultures. Saigontourist receives detailed guidance and special attention from the Government, HCM City leaders as well as other local authorities.
HCM City will always provide the best conditions to attract Japanese investors in tourism and tourism real estate, Nguyen Thi Hong said.
In the 2010 estimation, there will be about three million foreign tourists coming to HCM City, the figure for 2015 is estimated to reach five million. This year Vietnamese tourism was forecast to receive over 4.5 million foreign tourists, with eight million tourists and business visitors predicted for 2015.
